Alli, it’s like no other – main characteristic is that it soaks up liquid so you use very little. I’m going to do a post on coconut flour soon.

These sound divine Julie, I haven’t managed to find coconut flour down here yet, (+ getting anything sent to rural or postbox is a nightmare) but I’ve been on the look out for it after following Sarah Wilson’s blog for a while and her “I quit sugar” series. All very interesting stuff.

Interesting, I have never use coconut flour now I’m just going to have to try it. What kind of flour would you compare it to?

Full marks, Julie, for finding alternatives to turn such a gorgeous treat into something that is a healthier alternative to the norm. I’d find it hard to stop at just one of these though – I don’t know how many I would be able to save in the fridge for another day!!
